Skills – How to brine, bread and fry chicken, checking for doneness without a thermometer; sautéing green bean; making lump free mashed potatoes using a potato ricer; working with a black iron skillet to make cornbread with a crispy crust; making a local pecan pie without browning it to much and using a vanilla paste for the best whipped cream ever.
